Vinification
Harvest: By hand at full ripeness, hand sorted and destemmed.
Pre-fermentation maceration: 8°C for 12 hours then pressed.
Cold settling: 3 days.
Fermentation: 18 – 20°C for 15 – 20 days in French oak barrels, then stirred twice a week for one month.
Ageing: 6 months in oak barrels then filtered and bottled.
Tasting notes
Colour: Deep golden yellow.
Nose: Honey, butter and exotic fruits.
Palate: Toffee and vanilla balanced with fresh grapefruit and lemon.
Pairing
Best served chilled.
Pairs beautifully with fish in a creamy sauce, seafood risotto, poultry, goat’s cheese, and mature hard cheeses.
